Overall: 3/5 - Noisette Butter Poached Nova Scotia Lobster, Pickles, New Zealand Spinach, Crisp Fried Beef Tendon and Green Chartreuse Emulsion. That's the content in this dish. The lobster is sweet, tangy and fresh. Not a very big lobster which I guess is around 100gm only. Beef trotters are the freshest selected which then stews and braises and slowly cajoles gelatinous life into the tendons.

Overall: 4/5 - Must order dish! Slow Poached Montbazillac Cured Foie Gras Terrine with Melon Jelly, Orgeat Mousse, Pink Pepper Florentine and Walnut Country Bread. Do not directly eat the foie gras terrine because it is a little salty. The foie gras is use to spread over the bread and eat. Once you spread over the bread, scoop some orgeat mousse and cut a tiny piece of melon jelly on the bread and eat it. The taste is sensational beyond words to describe. It is so fragrance which seems like bringing me to another world. It is truly eye opening for me that food can be evolved into this extend. You need to try it yourself and do like what I did to understand what I am trying to say here.

Overall: 2/5 - Half a Chicken; the Breast Brined, Seared and Served with Green Olive Tapenade, the Skin as a Crisp, the Leg Boned, Rolled and Stuffed with Liver Mousse, the Gizzard Confit Fried Crisp. Not the chicken breast fault for the low score. The meat is well done and delicious. The problem is on the gizzard confit. Too salty until the extend of numbing my whole tongue and spoiling my taste bud. It took quite a long time for me by keep drinking water to clean it off. I have told the waiter about it but nothing is done by him. He acted like it is supposed to be like that. Something is wrong for me in this dish.

Overall: 4/5 - Must order and must be medium rare! Flash Fried Red Wine Marinated Fillet Mignon, Slow Cooked Vegetables, Porcini Mushrooms and Parsley Noodles. By just having a small piece of the beef, start counting to three at the moment you put into your mouth. It will surely gone within 3 seconds and the red wine fragrance together with the juice inside it started to spill out around your mouth which makes you say the magic word, "Yummy!"

Overall: 3/5 - Frozen Manjari Mousse, Dehydrated Chocolate Sponge, Guanaja Crèmeux, Whipped Jivara Ganache, Rum & Vanilla Sphere, Chocolate Crumble, Morello Cherry Sorbet. This is a very creative dessert which may looks kind of messy. You got bitter taste from the manjari mousse, sour taste from the cherry sorbet, sweet taste from the chocolate sponge and back to bitter again from the rum. It has done all a dessert should be tasted like.
